Bas Holten: one of Delicious Dordogne’s ‘master chefs’
One of the top chefs on our programme who will be giving demonstrations and classes to our guests – combined with a wine-tasting session where we will learn more about pairing wines with our dishes, and followed by sitting down to enjoy the fruits of our labour, is Bas Holten, Chef at Chateau les Merles. And we are truly fortunate to have Bas feature as one of our Delicious Dordogne Chefs!
Inspired by his tutor Albert Kooy, Bas Holten kitchen is based upon light menus with many vegetables. Using the product of South-West France, he creates modern, light and innovating dishes reflecting Château les Merles’ Philosophy.
After first gastronomic steps in the Netherlands, Bas international career leads to France where he worked in renowned restaurants like Paul Bocuse in Collonges at
the three-star Mont d’Or and at Armes de France the one-star in Ammerschwir.
Since 2004, Bas lives in the Dordogne with his family and is interested by typical produces from the South-West. He perfections his cooking every day by using local products and applying techniques learned in the past.
